Earth Day Bars
Ingredients from all over the world celebrate nature! Add in raisins from California, brazil nuts from the rainforest, pineapple from Thailand, chocolate from Africa, coconut from the Philippines and any other tasty treat you love!
You Will Need:
- 1½ cups baking mix (such as Bisquick)
- 1½ cups instant oats
- 1 cup packed brown sugar
- ½ cup softened butter (could use ¼ cup butter, ¼ cup applesauce too)
- 1 egg
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 cup total of the add-in fillings of your choice (coconut, nuts, chocolate chips, fruit and dried fruit, sunflower seeds, etc.)
Preheat over to 350 degrees F.
- In a large mixing bowl, combine baking mix, oats, sugar, butter, egg, cinnamon and nutmeg.
- Stir with a wooden spoon until it is a crumbly dough.
- Add your mix of treats and fold into dough.
- Press dough into a 9x13 inch pan (ungreased).
- Bake for 17 minutes or until centre is set and bars are slightly brown.
- Cool 10 minutes before cutting.
- Makes approximately 18 bars if cut into 2x3 inch sizes.
Spring Dill Potato Salad
You Will Need:
- 2 pounds new white potatoes
- 2 tablespoons apple cider vinegar
- salt and pepper to taste
- 1/2 cup thinly sliced celery
- 2 tablespoons fresh chopped dill
- 1/2 cup sliced green onions
- 1 tablespoon Dijon mustard
- 1 cup sour cream
- 1 cup mayonnaise, as needed
- An adult to help with the boiling water and cutting of hot potatoes
Directions:
- Cook the potatoes in a large pan of lightly boiling, salted water. If they are large, cut them into medium sized pieces to help with even cooking. They should be cooked to medium-soft, not mushy.
- Drain well and let cool to room temperature.
- Peel the cooled potatoes and slice 1/4 inch thick into a glass or stainless mixing bowl.
- Sprinkle with the cider vinegar and season with salt and pepper
- Refrigerate for at least 2 hours or overnight.
- Toss the potatoes with the celery, dill, green onions and mustard.
- Fold in the sour cream and then add in enough of the mayonnaise to bind the salad together.
- Refrigerate until serving. If it spends a long time in the refrigerator, the potatoes may absorb some of the moisture, so you may want to add a little extra mayonnaise just before you dish it up.
